After travelling to South America & Spain with fiance
Joanna Bolivar, Matt Waldron (Owner/Head Chef) discovered a passion for
the Spanish World and its culture of family gatherings,
spanish recipes that have been passed over generations and now their
modern cuisine. Matt understood that Latin
American food is similar yet different to Spanish
with both Cultures exchanging ingredients which have greatly enriched
each others cuisine.
Upon their return Matt and his desire to share the new found flavours,
made a connection with brothers John & Renato Virgona who were operating
a local Pizzeria. Matt won their hearts through their stomaches with his
cuisine enough so to share his vision of opening a Restaurante-Tapas
Bar on Glenferrie Road in Hawthorn, Melbourne.
Matt formerly Head Chef of Dipalma's Kew & Hawthorn (1999-2006) and
Rochford Winery, with Sous Chef Francis Lau
formerly of Reserve & Longitude 131 and Joanna as the host of LULO
head the team.
Dinning at LULO you will find
tapas dishes that encapsulate the tradition with
a contemporary twist on flavours. The emphasis is on small style plates
(Tapas) and medium size plates to share between
two or more (Racion). A variety of fresh and imported ingredients, presentation,
and the concept of a Tapas Bar in the Inner-Eastern
Suburbs has already made a difference in the opening eight months of business.
